Crackers daun kelor adalah jenis biskuit yang dibuat dari adonan keras melalui proses fermentasi atau pemeraman, berbentuk pipih yang berasa gurih dan renyah, terbuat dari tepung terigu, ragi, gula, garam, margarin, air dan bubuk daun kelor. Rekayasa ini bertujuan untuk : 1) mengetahui formula Crackers daun kelor, 2) mengetahui tingkat kesukaan panelis terhadap crackers daun kelor, 3) mengetahui kandungan gizi crackers daun kelor berdasarkan uji laboraturium, 4) harga jual produk Crackers daun kelor per 100 gram. Teknik pengambilan data melalui uji organoleptik dengan menggunakan instrumen uji tingkat kesukaan (hedonik) dengan panelis 50 orang. Uji kandungan gizi berupa karbohidrat, fosfor, vitamin A dan zat besi dilakukan dengan uji laboraturium. Perhitungan harga jual menggunakan metode konvensional. Tingkat kesukaan terhadap hasil jadi Crackers daun kelor adalah: Formula Crackers dengan Subtitusi Pati Ganyong dan Penambahan Bubuk Daun Kelor terdiri dari beberapa bahan yaitu terigu protein tinggi 60%, Pati ganyong 40%, bubuk daun kelor 4%, gram 2%, gula 1%, margarin 9,6%, mentega 8%, baking soda 0,2%, ragi 1%, susu bubuk 4%, air dingin 34%. Bahan pengisi (dust filling) yaitu tepung terigu 20%, garam 0,2%dan baking soda 0,16%. Prosentase berdasarkan dari berat total tepung. Penilaian tingkat kesukaan terhadap hasil jadi Crackers dengan Subtitusi Pati Ganyong dan Penambahan Bubuk Daun Kelor menunjukan bahwa 50 panelis (100%) menyatakan suka sampai cukup suka terhadap warna, 48 panelis (98%) menyatakan suka terhadap aroma, 45 panelis (89%) menyatakan suka terhadap rasa, 42 panelis (96%) menyatakan suka terhadap kerenyahan, dan 50 panelis (100%) menyatakan suka terhadap bentuk. Kandungan zat gizi dari Crackers daun kelor 100 gram berdasarkan hasil uji laboraturium adalah: karbohidrat 64,20 gram, fosfor 56,50 mg, zat besi 1,62 mg, dan vitamin A 112,07 mg.
