Pengaruh Proporsi Filtrat Almond dan Tempe Terhadap Kadar Total Flavonoid dan Fenolik pada Minuman Suplemen
Effect of Almond and Tempe Filtrate Proportion of Total Flavonoid and Phenolic Levels in Supplement Drinks
Covid-19 ialah infeksi sistem pernapasan yang diakibatkan oleh Severe Acute Respiratory Syndrome Corona Virus 2 (SARS-CoV-2). Kelompok yang berisiko tinggi terkena Covid-19 adalah orang-orang yang memiliki penyakit penyerta, memiliki daya tahan tubuh yang lemah, mengalami obesitas, dan lanjut usia atau lansia. Setiap orang terutama lansia, rentan terhadap penyakit. Berbagai upaya untuk menghindari infeksi Covid-19 dilakukan dengan meningkatan sistem imunitas tubuh dengan memperhatikan asupan makanan, salah satunya dengan mengkonsumsi minuman suplemen yang berasal dari bahan baku utama filtrat almond dan tempe. Penelitian ini bertujuan untuk mengetahui pengaruh proporsi filtrat almond dan tempe terhadap kadar total flavonoid dan fenolik pada minuman suplemen. Pengujian kadar total flavonoid dan fenolik dilakukan dengan metode spektrofotometer UV-Vis. Hasil pengujian kadar total flavonoid dan fenolik menunjukkan terdapat pengaruh proporsi filtrat almond dan tempe yang signifikan (p<0,05) dalam minuman suplemen dengan uji ANOVA satu arah. Pengujian kadar total flavonoid tertinggi pada formula F3 (75% almond dan 25% tempe) sebesar 83,290 ± 0,02 gQE/mL. Sedangkan pengujian kadar total fenolik tertinggi pada formula F3 (75% almond dan 25% tempe) sebesar 433,80 ± 0,04 gGAE/mL. Dari hasil tersebut dapat diketahui bahwa formula F3 minuman suplemen sebagai formula terpilih berdasarkan kadar total flavonoid dan fenolik.

Covid-19 is an infection of the respiratory system caused by Severe Acute Respiratory Syndrome Corona Virus 2 (SARS-CoV-2). Groups at high risk of contracting Covid-19 are people who have co-morbidities, have weak immune systems, are obese, and are elderly or elderly. Everyone, especially the elderly, is susceptible to disease. Various efforts to avoid Covid-19 infection are carried out by increasing the body's immune system by paying attention to food intake, one of which is by consuming supplement drinks derived from the main raw materials of almond filtrate and tempeh. This study aims to determine the effect of the proportion of almond and tempeh filtrate on the total levels of flavonoids and phenolics in supplement drinks. Testing of total flavonoid and phenolic levels was carried out using the UV-Vis spectrophotometer method. The results of testing the total flavonoid and phenolic levels showed that there was a significant effect of the proportion of almond and tempeh filtrate (p<0.05) in the supplement drink with a One-Way ANOVA test. The highest total flavonoid content test was in the F3 formula (75% almond and 25% tempeh) of 83,290 ± 0.02 gQE/mL. Meanwhile, the highest total phenolic content was tested in formula F3 (75% almond and 25% tempeh) of 433.80 ± 0.04 gGAE/mL. From these results, it can be seen that formula F3 of the supplement drink was the chosen formula based on the total flavonoid and phenolic content.
