SUSTAINABLE CAMPUS DINING: A CASE STUDY OF WASTE MANAGEMENT IN THE UNESA FOOD COURT
Penelitian ini membahas praktik pengelolaan sampah dan implementasi keberlanjutan di area foodcourt Universitas Negeri Surabaya (UNESA) dengan menggunakan pendekatan teori strukturasi Anthony Giddens. Foodcourt sebagai ruang publik kampus memiliki peran strategis dalam mewujudkan visi kampus berkelanjutan, namun sering kali luput dari perhatian dalam strategi tata kelola keberlanjutan. Temuan menunjukkan bahwa pengelolaan sampah masih berlangsung secara tidak terstruktur dan belum sepenuhnya mencerminkan prinsip keberlanjutan. Struktur formal seperti aturan dan pembagian peran antarunit belum mampu membentuk sistem yang kolaboratif. Minimnya edukasi, Standar Operasional Prosedur (SOP), serta koordinasi lintas unit menyebabkan reproduksi kebiasaan yang tidak ramah lingkungan. Kesimpulannya, terdapat kesenjangan antara visi keberlanjutan dalam dokumen resmi dengan praktik di lapangan. Oleh karena itu, dibutuhkan penguatan tata kelola dan struktur pendukung guna mendorong transformasi praksis yang berkelanjutan.

This study examines waste management practices and sustainability implementation in the food court area of Surabaya State University (UNESA) using Anthony Giddens' structuration theory approach. The food court, as a campus public space, plays a strategic role in realizing the vision of a sustainable campus, yet is often overlooked in sustainability governance strategies. The findings indicate that waste management remains unstructured and does not fully reflect sustainability principles. Formal structures such as rules and division of roles between units have not been able to form a collaborative system. The lack of education, Standard Operating Procedures (SOPs), and cross-unit coordination has led to the reproduction of environmentally unfriendly habits. In conclusion, there is a gap between the vision of sustainability in official documents and practices in the field. Therefore, strengthening governance and supporting structures is needed to encourage the transformation of sustainable practices.
