Dendeng lumat atau dendeng giling merupakan produk makanan awetan dari daging yang diberi bumbu dengan melalui proses digiling atau dilumatkan. Ikan tongkol merupakan salah satu jenis ikan laut yang memiliki kandungan protein yang hampir sama dengan daging sapi, yaitu mengandung omega 3 dan yodium dan sangat bermanfaat bagi otak, proteinnya yang tinggi sangat cocok dikonsumsi oleh anak-anak dalam masa pertumbuhan. Selain itu, ikan tongkol termasuk jenis ikan yang hidup di perairan yang biasanya mengalami panen raya.Tujuan penelitian uji coba ini adalah mengetahui: 1) formula pembuatan dendeng lumat campuran ikan tongkol dengan jamur tiram, 2) hasil jadi dendeng lumat campuran ikan tongkol dengan jamur tiram, meliputi warna, aroma, tekstur, dan rasa, 3) harga jual produk per 100g.Pengambilan data penelitian uji coba ini menggunakan observasi melalui uji organoleptik instrumen pengambilan data menggunakan kuisioner yang diisi oleh 10 panelis untuk menilai sifat organoleptik dendeng lumat campuran ikan tongkol dan jamur tiram, meliputi warna, aroma, tekstur, dan rasa. Metode uji coba pembuatan dendeng lumat campuran ikan tongkol dengan jamur tiram dilakukan tiga kali di laboraturium pengolahan makanan, jurusan Pendidikan Kesejaterahan Keluarga, Fakultas Teknik UNESA. Analisis data dilakukan dengan deskriptif kuantitatif dengan persentase.perhitungan harga jual menggunakan cara konvesional. Hasil penelitian menujukan: 1) formula dendeng lumat ikan tongkol dengan campuran jamur tiram menggunakan daging ikan tongkol 666 gram, jamur tiram 333 gram, bawang merah 50 gram, bawang putih 50 gram, gula pasir 100 gram, gula merah 250 gram, garam 20 gram, asam jawa 35 gram, ketumbar 25 gram, dan jahe 5 gram; 2) hasil penilaian menunjukkan 70% (7 panelis) menyatakan warna dendeng lumat merah kecoklatan, 80% (8 panelis) menyatakan beraroma gurih, 60% (6 panelis) menyatakan tekstur kurang halus dan kurang berserat, 50% (5 panelis) menyatakan berasa gurih dan cukup berasa ikan tongkol; 3) Harga jual dendeng lumat campuran ikan tongkol dengan jamur tiram sebesar Rp. 21.000/100g.
Mashed beef jerky or beef jerky is a preserved food product from meat that is seasoned with a process of ground or crushed. In addition, tuna are among the types of fish that live in waters that normally experience major harvests.The purpose of this trial is to find out: 1) the formula for making mashed beef jerky mix with oyster mushrooms, 2) the result of mashed beef jerky mixed with oyster mushrooms, including color, aroma, texture, and taste, 3) the selling price of products per 100gRetrieval of research data using observations through organoleptic testing data collection instruments using a questionnaire filled by 10 panelists to assess the organoleptic properties of mashed beef jerky mixed with oyster and mushroom, including color, aroma, texture, and taste. The trial method of making mashed beef jerky mixed with oyster mushrooms was carried out three times in the food processing laboratory, majoring in Family Welfare Education, Faculty of Engineering, UNESA. Data analysis was performed by quantitative descriptive with percentage. Calculation of selling prices using conventional methods.
The results of this research are: 1) mashed beef jerky formula with oyster mushroom mixture using 666 grams of tuna fish meat, 333 gram oyster mushroom, 50 gram onion, 50 gram garlic, 100 gram sugar, 250 gram brown sugar, 20 gram salt 35 grams of tamarind, 25 grams of coriander, and 5 grams of ginger; 2) the results of the assessment showed 70% (7 panelists) stated the color of brownish red pulverized beef jerky, 80% (8 panelists) stated it had a savory aroma, 60% (6 panelists) stated the texture was less smooth and less fibrous, 50% (5 panelists) indicated tasty and taste enough tuna; 3) The selling price of mashed beef jerky mixed with oyster mushrooms is Rp. 21,000 / 100g.
