ANALISIS KADAR LOGAM TIMBAL (Pb) DAN PROTEIN PADA RUMPUT LAUT Caulerpa lentillifera DI PANTAI KECAMATAN PALANG KABUPATEN TUBAN
ANALYSIS OF LEAD (Pb) METAL AND PROTEIN CONTENT IN SEAWEED Caulerpa lentillifera AT BEACH OF PALANG DISTRICT, TUBAN REGENCY
Rumput laut C. lentillifera tumbuh melimpah di Pantai Kecamatan Palang Kabupaten Tuban dan dikonsumsi oleh masyarakat setempat. Rumput laut sebagai bahan pangan harus mengandung nutrisi pangan dan bebas cemaran logam. Tempat Pelelangan Ikan (TPI) Palang, kegiatan perikanan darat, antropogenik, dan muara sungai diduga menjadi sumber pencemaran. Penelitian ini bertujuan untuk mengetahui kualitas perairan Pantai Kecamatan Palang Kabupaten Tuban secara fisika kimia, kadar logam Pb air laut, kadar logam Pb sedimen, kadar logam Pb C. lentillifera, kadar protein C. lentillifera, dan menganalisis hubungan antara kadar logam Pb C. lentillifera dengan kadar protein C. lentillifera, serta menganalisis hubungan antara kualitas perairan, kadar logam Pb air laut, kadar logam Pb sedimen, kadar logam Pb C. lentillifera, dan kadar protein C. lentillifera. Pengambilan sampel dilakukan di dua stasiun pengamatan meliputi stasiun I Desa Panyuran dan stasiun II Desa Glodog. Analisis kadar logam Pb menggunakan Atomic Absorbtion Spectrophotometry (AAS). Analisis kadar protein dengan metode Kjeldahl. Analisis data dilakukan secara deskriptif kuantitatif, statistik korelasi Pearson menggunakan SPSS, dan statistik Principle component analysis (PCA) menggunakan XLSTAT. Hasil penelitian menunjukkan bahwa kualitas perairan Pantai Kecamatan Palang Kabupaten Tuban secara fisika kimia tergolong baik, sebagian besar parameter memenuhi baku mutu berdasarkan Peraturan Pemerintah RI No. 22 Tahun 2021. Stasiun I memiliki karakteristik pH dan suhu yang tinggi, sedangkan stasiun II memiliki karakteristik salinitas, DO, dan kecepatan arus yang tinggi. Kadar logam Pb air laut berkisar antara 0,026 ± 0,004 mg/L hingga 0,040 ± 0,005 mg/L, tidak memenuhi baku mutu berdasarkan Peraturan Pemerintah RI No. 22 Tahun 2021. Kadar logam Pb sedimen berkisar antara 2,235 ± 0,047 mg/kg hingga 2,352 ± 0,073 mg/kg, masih memenuhi baku mutu berdasarkan Candian Council of Ministers for The Environment Tahun 2002. Kadar logam Pb C. lentillifera berkisar antara 0,147 ± 0,022 mg/kg hingga 0,168 ± 0,030 mg/kg, masih memenuhi baku mutu berdasarkan Keputusan Direktorat Jenderal Pengawasan Obat dan Makanan (BPOM) No. 5 Tahun 2018. Kadar protein C. lentillifera berkisar antara 5,300 ± 0,281% hingga 6,087 ± 0,824% dari berat basah, telah memenuhi baku mutu berdasarkan Tabel Komposisi Pangan Indonesia (TKPI) Kemeterian Kesehatan Tahun 2017. Hubungan antara kadar logam Pb C. lentillifera dengan kadar protein C. lentillifera di Pantai Kecamatan Palang Kabupaten Tuban menunjukkan korelasi positif sangat kuat (R = 0,933). Hubungan antara kualitas perairan, kadar logam Pb air laut, kadar logam Pb sedimen, kadar logam Pb C. lentillifera, dan kadar protein C. lentillifera menunjukkan korelasi positif dan negatif (R = -0,110 hingga 0,975).

Seaweed C. lentillifera grows abundantly on the Beach of Palang District, Tuban Regency, and was consumed by the local community. Seaweed as a food ingredient must have food nutrition and free of metal contamination. Fish Auction of Palang District (TPI), inland fishery activities, anthropogenic, and river estuaries were suspected to be sources of pollution. This study aimed to determine the seawater quality in Palang District, Tuban Regency based on physical and chemical parameters, Pb content in seawater, Pb content in sediment, Pb content in C. lentillifera, protein content in C. lentillifera, and analyze the relationship between Pb content in C. lentillifera and protein content in C. lentillifera, as well as analyze the relationship between seawater quality, Pb content in seawater, Pb content in sediments, Pb content in C. lentillifera, and protein content in C. lentillifera. Sampling was carried out at two research stations, including Station I Panyuran Village and Station II Glodog Village. Analysis of Pb heavy metal content using Atomic Absorption Spectrophotometry (AAS). Analysis of protein content by Kjeldahl method. Data analysis was carried out using descriptive quantitative, Pearson correlation statistics using SPSS, and Principle component analysis (PCA) statistics using XLSTAT. The results of the research showed that quality of the coastal waters of Palang District, Tuban Regency, was good in physics and chemistry, most of the parameters met the quality standards based on Indonesian Government Regulation Number 22 of 2021. Station I had high pH and temperature characteristics, while station II had high salinity, DO, dan seawater current flow. The Pb content in seawater is ranges from 0,026 ± 0,004 to 0,040 ± 0,005 mg/L, not meeting the quality standard based on Indonesian Government Regulation Number 22 of 2021. The Pb content in sediment is ranges from 2,235 ± 0,047 to 2,352 ± 0,073 mg/kg, still meeting quality standard based on Candian Council of Ministers for The Environment of 2002. The Pb content in C. lentillifera is ranges from 0,147 ± 0,022 to 0,168 ± 0,030 mg/kg, still meeting quality standard based on Decree of the Director General of Drug and Food Control (BPOM) Number 5 of 2018. The protein content of C. lentillifera ranges from 5.300 ± 0.281% to 6.087 ± 0.824% of wet weight, meeting quality standard based on Indonesian Food Composition Table (TKPI) of the Ministry of Health 2017. The relationship between Pb content in C. lentillifera and protein content in C. lentillifera showed a very strong positive correlation (R = 0,933). The relationship between seawater quality, Pb content in seawater, Pb content in sediments, Pb content in C. lentillifera, and protein content in C. lentillifera showed a positive and negative relationship (R= -0,110 to 0,975).
