REKAYASA PEMBUATAN SPRING ROLL ISI UBI UNGU DENGAN SAUS NANGKA

PURPLE SWEET POTATO JACKFRUIT SAUCE

Abstrak

       Spring Roll atau lumpia merupakan olahan makanan dari Indonesia yang diisi dengan sayuran, daging dan lainnya. Spring Roll Isi Ubi Ungu dengan Saus Nangka merupakan produk olahan dari ubi jalar ungu dengan tambahan bahan lain terdiri dari keju parut, susu, telor, tepung maizena, gula, garam dan ditambah dengan saus nangka. Rekayasa ini bertujuan untuk mengetahui: 1). tingkat kesukaan panelis terhadap bentuk, warna, aroma, tekstur,rasa, kesesuaian saus dan secara keseluruhan dari Spring Roll Isi Ubi Ungu dengan Saus Nangka 2). Kandungan gizi Spring Roll Isi Ubi Ungu dengan Saus Nangka per 100 gr 3). Harga jual per biji Spring Roll isi Ubi Ungu dengan Saus Nangka. Metode yang digunakan adalah metode rekayasa atau uji coba, rekayasa dilakukan dalam tiga kali uji coba. Data penilaian uji kesukaan  diperoleh dari 30 panelis. Perhitungan hasil uji kesukaan dengan deskriptif kualitatif (persentase). Perhitungan kandungan gizi menggunakan DKBM, perhitungan harga jual dilakukan dengan cara konvensional Hasil rekayasa tingkat kesukaan menunjukkan bahwa: 47% menyatakan cukup suka terhadap bentuk, 57% menyatakan cukup suka terhadap warna, 53% menyatakan suka terhadap aroma, 63% menyatakan suka tekstur, dan 50% menyatakan suka terhadap rasa, 47% menyatakan cukup suka terhadap kesesuaian Saus dan 63% menyatakan cukup suka terhadap keseluruhan.  Kandungan zat gizi produk Spring Roll Isi Ubi Ungu dengan Saus Nangka per 100 gram adalah Energi 337 kkal, Protein 11 gram, Lemak 18 gram, Karbohidrat 39 gram, Kalsium 205 mg, Fosfor 194 mg, Zat besi 1 mg, Vit.A 2.859 SI, Vit.C 13 mg, Vit.B1 0,37 mg. Abstract

This engineering aims to determine: 1). Nutritional content of Spring Roll with Purple Sweet Potato and Jackfruit Sauce per 100 gr 3). Selling price per Spring Roll seed filled with purple sweet potato with jackfruit sauce. The method used is the engineering method or trial, engineering is carried out in three trials. The preference test data were obtained from 30 panelists. The calculation of the results of the favorite test using qualitative descriptive (percentage), the calculation of the nutritional content using DKBM, the calculation of the selling price is done in a conventional way. like the aroma, 63% said they liked the texture, and 50% said they liked the taste, 47% said they liked the suitability of the sauce and 63% said they liked the whole thing. The nutritional content of Spring Roll products with Purple Potato Sauce per 100 grams is Energy 337 kcal, 11 grams of protein, 18 grams of fat, 39 grams of carbohydrates, 205 mg of calcium, 194 mg of Phosphorus, 1 mg of iron, Vit A 2.859 SI , Vit C 13 mg, Vit B1 0.37 mg.
